Bison Chili

Ingredients

1 ½ lbs of ground bison meat (or beef, turkey, or vegetarian substitute)

1 large (68fl oz) bottle of V8 Spicy Hot vegetable juice

1 can of chili beans

1 can of black beans (rinsed)

2 Tablespoons of chili powder

1 teaspoon of garlic powder

½ teaspoon of cinnamon

2 teaspoons of cumin

1 can of tomato sauce

1 can of Rotel or diced green chilis

Instructions:

  1. Cook the meat with water to boil it and reduce the risk of overcooking it. Bison meat can overcook and dry out, boiling it helps retain the tenderness and flavor. Drain the water after you are done cooking the meat.

  2. Add the V8 juice, beans, tomato sauce, and Rotel to a large cook pot or slow cooker.

  3. Add in the meat and season with the spices and salt/pepper to taste. 

  4. Cook on medium heat until everything is cooked through and the chili smells flavorful. 

  5. Serve with cornbread, sour cream, cheese, and any of your other favorite toppings!
