Trail Mix Bark
Ingredients
1 lb dark chocolate, chopped (I like using one with around 60-70% cacao)
1 cup trail mix
1/4 cup dried & toasted coconut chips
1/2 tsp sea salt
Instructions
Line a baking sheet with parchment paper. In a microwave-safe bowl, melt chocolate in the microwave in 30-second increments, stirring after each, until completely melted.
Pour melted chocolate on parchment paper and spread, creating a 1/4-1/2 inch layer of chocolate.
Sprinkle melted chocolate with trail mix, coconut, and salt. Refrigerate bark for about 10 mins until completely set.
Once set, cut bark into pieces using a sharp knife, and eat or store. Bark can be kept in an airtight container for 10 days.
Note: You can mix it up by using your favorite trail mix ingredients in this bark. Try pistachios, dried cranberries, pretzels or whatever you want!
